Internationally a Uk ltd company is better, but it depends on your volumes of work, invoicing etc.
I would stay UK sole trader. Work in Spain , using you UK accountants,If business gets bigger get a company. Aproach a Spanish accountant and ask there advice.
The system I used in Spain was I had a high street office called (lets say) Spanish Villas, There we had all our paperwork , invoices etc with the UK company details on. We brought paper,ink,stationary etc, got the spanish iva factura the ran all through uk company and the rent reciepts etc .All very legal.
